Today is turning out to be much better than yesterday thank goodness! I am not a person who can focus on just one thing so you will see a handful of different things on my blog. I try to keep it focused on home business ideas and blogging but we all need a break from those things! Taking a break actually helps me refocus and often times thoughts come swarming to me during my break times!
So I am now dedicating Wednesdays on this blog to Pinterest Fun Days! I will take an idea (or two) that I find on Pinterest and recreate it. Some of these ideas will be a flop and some will turn out great! This is where I will document my attempts!
Today’s attempt was a healthier version of chocolate cake. I LOVE chocolate cake but I’m trying to eat healthier and hopefully lose weight. This cake would still be recommended for a special occasion or a treat to make to share with several others as it still has flour and sugar in it. However, some of the other ingredients have been replaced with healthier ingredients.
First, I used the recipe that is attached to the pin that comes from The Blooming Hydrangea. It is made from a simple cake mix, Greek yogurt and water.
The cake batter was much thicker than typical cake batter even with adding the extra cup of water. I found a couple of similar Pinterest ideas where no water was added and I’m not sure how well it would turn out, seems like it would be too dry!
I know my cake pans don’t match…I’m not sure what happened to the pair to each of these but they are gone and I’m too cheap to buy matching cake pans!
They did rise a little more than I expected buy not as much as a typical cake.
I decided to try a frosting recipe that I found on Pinterest as well. This one is made with a can of coconut milk. I found this one at Chocolate Covered Katie. I didn’t read the directions close enough and used the watery part of the coconut milk as well as the creamy part so my frosting turned out more like a glaze than a frosting. It still has a decent flavor though!
In all, I would probably make this again. The cake is definitely denser and a little more tough than a regular cake but is more cake-like than brownie like. It still has a good flavor and the kids like it. I am pondering how I can make it even better the next time.

Regardless of how it tastes, it looks yummy! I cook from Pinterest a lot these days. Some are flops, but most are awesome. I have a couple of microwave mug cakes on my list for this weekend!
My husband went crazy over it….I thought he would turn his nose up at it because he’s pretty picky! Haha…guess it’s not too bad!
I do like some of those microwave mug cakes….gets rid of the craving without allowing all the extra calories to sit around (and somehow eventually jump into my mouth)!
